There is this amazing creamy tomato soup served up at The Beach Bar in Clark Lake, Michigan. It is so good that everyone orders it, even if it is 90 degrees out. Yum! They won’t fork over the recipe so, one day in desperation, I whipped up my own. It’s not half bad. Actually, who am I kidding – it rocks! Ready?
1 can of cream of tomato soup
1 can filled with cream, half-n-half or milk
1 tsp minced garlic
1 diced tomato
Heat & top with mozzarella cheese and croutons – wow!
